Filet Mignon with a Blue Cheese Crumble
This recipe is SO EASY and truly so delicious. When we got our first set of beef back from the processor in 2022 I honestly know how to cook high end steaks. From the store, we mostly just bought sirloin steaks and rib eyes. But when I had all of these new cuts, it was time I started venturing out of my comfort zone and try new cooking methods and cooking with different cuts of meat that I thought were more challenging.
One cut that was intimidating for me was a filet mignon. I was intimidated because it is a thicker cut of meat and is so tender, I was always afraid of overcooking. But in all actuality, it is SO easy.
I love to add this blue cheese crumble to the top to give it a little pizazz! I’m truly not a blue cheese fan. I don't ever think to myself “blue cheese sounds great!” But it totally works with this steak and it is one of my favorite ways to cook it.
Start with two (or however many you’d like to cook) beautiful CCM filets (AKA tenderloin steaks). Season them with Garlic Pepper and Salt and sear them on medium high heat in your cast iron pan with a high smoke point fat. I like to use avocado oil or tallow. This is a good time also to preheat your oven to 400 degrees.
Do not cook the steaks, we are simply searing all sides right now. I like to sear my steaks for about 1 minute each side. While the steaks are searing I will mix together my blue cheese crumble. After seared, keep in your cast iron pan. Carefully press your toppings onto each filet and place the cast iron into the preheated oven.
All ovens cook differently in regards to heat and time. I always like to follow timelines but rely on a meat thermometer to truly see where my meat is at. Bake your steaks for 8-10 minutes. I somewhat will follow timelines but I prefer to gauge my cooking time off of meat temperature. So use a meat thermometer and check your meat while it’s cooking.
I will pull my steaks at around 115-120 degrees. Careful not to burn yourself and always use a pot holder… I tend to forget and ALWAYS grab the handle.. no no. If you are preferring a more cooked steak, such as medium, pull your steaks at 125-130 degrees.
Once they are at your desired temperature, pull from the oven and let them rest abut 5 minutes before slicing and serving.
Just out of the oven and resting before slicing into.
Ingredients:
Filet Mignon
Salt & Garlic Pepper to taste
Oil of choice (Avocado Oil or Tallow)
Blue Cheese Crumble:
2 TBSP melted butter
1/4 Cup Blue Cheese Crumbles
1/2 Cup Italian Breadcrumbs
What to do:
Bring steaks to room temperature. Pat dry and season well with garlic pepper and salt. Preheat your oven to 400 degrees.
Preheat cast iron over medium high heat and add your oil to coat the bottom of the pan.
Sear all sides of your steak. Important to note that we are not cooking our steaks here. We are simply just searing each side. Approximately one minute per side.
While the steals are searing mix to combine your crumble ingredients. Gently press onto the tops of the filets and place into the preheated oven.
Bake your filets for about8-10 minutes. Check the temperature and pull at your desired doneness. I like to pull my steaks at 115-120 degrees. If you are wanting a more medium finished steak, pull around 130 degrees.
Pull from the oven and let rest for 5 minutes before slicing and serving them. I use this time to plate the rest of the menu items.
